My famous cupcake recipe!!

Hello everyone!

I actually have to admit this isn’t my recipe but it comes from my favourite cooking magazine called Saveur and this is the recipe for Vanilla Cupcakes!

This recipe is from the 2014 “Special dessert” 2014.

Ingredients: 

  • 12746588_10153220084077024_1966206698_n110g of cake flour (with incorporated baking soda)
  • 95g of all purpose flour
  • 125g of butter at ambient temperature
  • 2 big eggs
  • 220g of sugar
  • 12cl of milk
  • 1 tea spoon of vanilla extract
  • for the icing:
  • 125g of very soft butter
  • 375g of icing sugar
  • 2 table spoons of milk
  • 1 tea spoon of vanilla extract
  • food colouring

How to make them:

Heat up your oven at 180°C

  • Mix the flours together
  • Work the butter until softened and add the sugar. Mix with an electric mixer for 3mins, until you get a soft and creamy mixture. Add the vanilla extract, and the eggs one by one. Mix in well in between each eggs.
  • Incorporate the flours three consecutive times, alternating with the milk. Don’t work the dough too much.
  • Fill in 3/4 of your muffin tins (or paper cupcake tins that go in the oven) and put it in the oven for 20mins more of less.
  • When the cupcakes are cooked, start the icing.
  • Mix with an electric mixer the butter and add the sugar little by little at a very slow speed, until you get a soft but firm texture. Add the milk, the vanilla extract and the food colouring whilst still mixing for a few more seconds.
  • When the cupcakes are cold you can add your icing on top!

You can mix different food colouring to make even more colours for the icing! This is especially fun when you are baking with kids. (Don’t worry food colouring comes off your fingers and clothes)

When adding the icing on the cupcake I usually use a knife and turn the cupcake without moving the
knife so that the icing spreads evenly and in a nice twirly shape!
